Grown by Jairo Arcila at Finca Santa Mónica in Armenia, Quindío, this remarkable microlot showcases the innovative spirit of Colombian coffee. At 1450–1500 meters above sea level, the Castillo variety—developed for both productivity and resilience—thrives under Jairo’s careful cultivation.
This lot undergoes a unique dry anaerobic fermentation of 72 hours with the pulp on, enriched by the addition of fresh lychee and select wine yeast. This process draws out the coffee’s complex fruit notes and enhances its sweetness. After fermentation, the cherries are pulped and dried on raised beds to achieve optimal moisture and consistency.
In the cup, expect an intensely sweet profile brimming with lychee, cacao powder, and a delicate floral finish. With a cupping score of 88.25, this coffee exemplifies the harmony between innovation and tradition in Colombian coffee craftsmanship.
