This Yellow Bourbon lot is the result of meticulous work led by Tatiana Chagas, who, along with her husband Matheus Avelar Dominguito, transformed the farm’s operations to focus entirely on quality and sustainability. The cherries are carefully handpicked at peak ripeness, floated to remove defects, then fermented using Selvatech yeast in sealed tanks to amplify the natural sweetness and complexity of the fruit — all without masking the inherent characteristics of the terroir.
In the cup, expect a delicate and elegant profile. Fragrant floral notes open the experience, followed by layers of apricot, peach, and tropical fruit. As it cools, soft tones of jasmine and wild honey emerge, wrapped in a smooth toffee-like sweetness. The mouthfeel is silky and clean, leaving a lasting impression of refined sweetness and complexity.
