This batch comes from Dropshot Coffee Roasters’ good friend, Hidardo Hernandez, whom Răzvan Burlacu visited earlier this year. With a unique processing method, Yeast Sauvignon represents Hidardo’s signature project, involving the inoculation of coffee cherries with yeast strains that interact with the natural sugars in the layers, enhancing various aromatic characteristics. The true complexity of the process is known only to Hidardo, but everyone can enjoy the final result.
