About this coffee
Fortaleza is a coffee from our Core range, chosen for its familiar sweetness and its round, easy-to-drink-every-day profile. In the cup, caramel and chocolate form the base, while hazelnut rounds out a comforting, clean, and balanced taste.
The lot is produced by Augusto Borges at Fortaleza Pamela farm, in the Mantiqueira de Minas region of Brazil. Augusto runs a family business and carefully tends every stage, from variety selection to sorting the green coffee.
The Yellow Catuaí is grown at around 1,000 meters and naturally processed. The cherries are left to dry until the pulp and skin dry out completely, then the beans are hulled and sorted by density and size. This processing preserves the well-defined sweetness and classic structure of the coffee.
The green coffee was selected through CoffeeNativ, as part of their long-standing relationship with Augusto Borges. For us, the value of this lot lies in well-executed simplicity: a clear, sweet, and consistent profile, with no gimmicks.
We recommend it when you want a round espresso with low acidity and a clean aftertaste. In a cappuccino or latte, the notes of caramel, chocolate, and hazelnut stay present; as filter coffee, it becomes lighter but keeps the same sweetness. We recommend methods, not rules — brew it however you like.
