About this coffee
SAKURA is a competition lot produced by Julio Andres Quiceno at Finca Milán, in Pereira, Risaralda, Colombia, at an altitude of 1,500 masl. Growing the Sidra Bourbon varietal, Julio Andres is known for his precision-oriented, innovative approach to processing, and this lot was selected for the current competition season, being used by a national competitor for its aromatic clarity and complexity.
The coffee is processed using the Culturing-Nitro method, developed by Café UBA. Fermentation is carried out using selected native yeasts, Kazachstania humilis and Kazachstania exigua, and fruit — pineapple, blackberry, and peach — is added during fermentation. The process takes place in a nitrogen-modified atmosphere, meant to intensify microbial activity and the development of aromatic compounds. The fruit isn’t added afterward for flavoring — it’s part of the fermentation stage itself, contributing to the development of the final profile. After fermentation ends, the coffee is washed and sun-dried for 25 days.
The result is a vibrant, well-defined expression of the Sidra Bourbon varietal, with notes of ripe grape, elegant floral accents, and bright citrus nuances, supported by a clear structure, fine acidity, and a long finish. SAKURA scored 92 points and is part of the OVRIDE Reserve series.
The available quantity is very limited, and each container represents a separate 80 g roast, done on our Nucleus Link roaster — the same type of equipment used by many competitors to roast competition coffees. This allows us to keep the profile clean, balanced, and true to the producer’s intent.
To protect the integrity of this lot, the coffee is packaged in a violet glass container with advanced light-filtering properties. This type of glass blocks the radiation that accelerates aromatic degradation and helps preserve the freshness and clarity of the profile for longer. For a competition coffee, where stability and precision are essential, this kind of packaging offers the right protection.
